Souffle Crackers

10 saltine crackers
1 ice water
1 melted butter
Preheat oven to 400. Brush a baking sheet with melted butter. Fill a 9 X 13 pan with ice water. Add crackers to pan. Let float, turning once for about one minute. Fish out with fingers and place on baking sheet, Carefully brush tops with melted butter. Be carefull not to squash crackers. Bake 15 minutes. Reduce heat to 300 and continue baking until golden brown and crisp, about 25 minutes. Cool on a wire rack. Store in an airtight container. Eat plain or serve with pate, dips or spreads.
