Blueberry Delight #586 9/01

1 pint blueberries
1/4 cup sugar
2 1/2 teaspoon cornstarch
1 teaspoon fresh lemon rind
1 3 oz. package cream cheese; softened
1/4 cup confectioners sugar
1 teaspoon vanilla extract
1 cup heavy cream

In a saucepan, over medium heat, stir blueberries, sugar, and cornstarch. Cook and stir until mixture bubbles and thickens. May have to add some more cornstarch mixed with a little water if it does'nt thicken. Remove from heat and mix in lemon rind. Cool. Pour mixture into a glass bowl. Cover and refrigerate. When ready to serve, beat cream cheese until soft. Add sugar, vanilla and cream. Beat until fluffy and soft peaks form. Pour this mixture on top of blueberry mixture and fold so that you get streaks of blue and white. Keep refrigerated until ready to serve. Can be garnished with whold blueberries.

Yield: 6 servings
