Skillet Cornbread 1/00

2 teaspoon bacon drippings
1 large egg
2 cup buttermilk
1 3/4 cup cornmeal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
sugar (optional)
Coat bottom and sides of a 10 inch cast iron skillet with drippings. Heat in a 450 degree oven. Stir together egg and buttermilk. Add cornmeal, stirring well. Stir in baking powder, soda and salt. Pour batter into the hot skillet. Bake at 450 for 15 minutes or until slightly browned. It would be a good idea to add 1/4 cup to 1/2 cup sugar to the batter.
