Shredded Barbecued Beef **** 5/97

4 lb boneless beef chuck roast
3 tablespoon cooking oil; divided
2 large onions; chopped
1 cup ketchup
1 cup beef broth
2/3 cup chili sauce
1/4 cup balsamic vinegar
1/4 cup brown sugar
3 tablespoon worcestershire sauce
2 tablespoon molasses
2 tablespoon dijon mustard
2 tablespoon lemon juice
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1 tablespoon liquid smoke
12 buns or kaiser rolls
In a ductch oven, brown the roast on all sides in 1 TB oil. Meanwhile in a large saucepan, saute onions in remaining oil until tender. Add remaining ingredients except buns. Bring to a boil; reduce heat and simmer uncovered for 15 minutes, stirring occasionally. Pour over the roast. Cover and bake at 325 for 2 hours; turn the roast and bake for 2 more hours or until the meat is very tender. Remove roast and shred with a fork. Add enough sauce to make a pleasant consistancy and taste. Serve on the rolls
