Sausage Casserole **** 1/98

4 oz sharp cheddar cheese; grated
1/8 teaspoon dry mustard
1/8 teaspoon paprika
1/4 teaspoon salt
3/8 cup sour cream
1/2 lb bulk sausage; cooked
4 eggs; beaten

Spray a 1 qt. baking dish with Pam. Sprinkle half of the cheese in the baking dish. In a small bowl, combine the mustard, paprika, salt, and sour cream. Add the sausage and spread the mixture over the cheese. Cover with plastic wrap and refrigerate three hours or overnight. Preheat oven to 325. In a medium size bowl, beat the eggs and pour over the sausage mixture. Sprinkle remaining cheese over top and bake for 30 minutes, or until eggs are set.

Yield: 2 servings
