Sandy's Zucchini Bread ***

3 each eggs
1 cup sugar
1 cup brown sugar
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon cinnamon
2 cup zucchini; grated w/skins
1 cup chopped nuts
1 cup oil
1 teaspoon salt
3 teaspoon vanilla
3 cup flour

Beat eggs until fluffy. Continue beating and add oil, sugars, soda salt, cinnamon, flavoring, and baking powder. Mix in zucchini, flour, nuts. Bake in two greased loaf pans for 1 hour. Spread it with butter or cream cheese.

Yield: 16 servings
