Pork Piccata **** 5/97

3/4 lb pork tenderloin
3/4 cup miracle whip; divided
1/4 cup seasoned bread crumbs
1 tablespoon parmesan cheese
1 tablespoon butter
1 garlic clove; minced
2 tablespoon milk
2 tablespoon capers; drained
2 teaspoon lemon juice

Slice pork into 3/4 inch slices, or just use boneless pork chops. Pound to 1/4 inch thickness. Spread pork generously with 1/4 cup Miracle Whip. Combine crumbs and cheese. Coat pork with crumb mixture. Melt butter and saute garlic for a minute or two. Reduce heat. Add pork; cook over medium heat until meat is no longer pink. Combine remaining salad dressing, milk, capers, and lemon juice; mix well. Spoon over the pork.

Yield: 4 servings
