Porcupine Meatballs **** 8/97

10 3/4 oz can condensed tomato soup
1 lb ground beef
1/4 cup uncooked rice
1 egg; slightly beaten
1/4 cup minced onion
2 tablespoon minced parsley
1 teaspoon salt
2 tablespoon oil
1 garlic clove; minced
1 teaspoon oregano
Mix 1/4 cup tomato soup with the beef, rice, egg, onion, parsley, and salt. Shape into 1 1/2 inch balls, about 16. In a large skillet, brown the meatballs in the oil with the garlic. Blend in the rest of the can of soup, 1 cup of water and the oregano. Cover, reduce heat and simmer for 40 minutes, stirring now and then. Serve this with mashed potatoes. Some like to sprinkle Parmesan cheese or Italian seasoning on top.
