Pinehurst New Potatoes

2 lb new potatoes
1 each large onion
1/2 cup butter
1 teaspoon thyme
2 tablespoon parsley
1 single salt
1 single pepper

Boil new potatoes until done. Cut them into halves or quarters. Saute the onion in the butter. Add the thyme and parsley. Mix. Add the potatoes, salt and pepper. Saute a little more, adding more butter if needed. Serve hot. Pour some of the butter over top.

Yield: 6 servings
