Orange Quickbread 5/18/00 #514

6 oz orange juice concentrate; thawed
2 large, ripe bananas
2 eggs
2 cups self rising flour
1 1/2 teaspoon pumpkin pie spice
1 teaspoon baking soda
6 tablespoon white raisins
chopped walnuts (optional)

Thaw orange juice but don't dilute. Combine it with the peeled bananas and eggs in an electric mixer bowl. Beat until fluffy. Stir flour, spice, and baking soda tegether and add to mixing bowl. Beat one minute. Stir in raisins and nuts if desired. Spoon into a 5 X 9 inch loaf pan that has been sprayed with some Pam. Bake in a 350 degree oven for 35 to 50 minutes or until a knife inserted near the center comes out clean.
