Orange Glazed Carrots **** 10/97

1 lb baby carrots
2 tablespoon butter
1/4 cup minced onion
1/4 cup brown sugar
2 tablespoon frozen orange juice
1 concentrate; thawed
2 tablespoon orange liqueur
Steam carrots 6 to 8 minutes or until crisp tender. Melt butter in a small saucepan; add onion and saute until tender. Stir in brown sugar, orange juice, and liqueur, and cook until slightly thickened. Toss with carrots and serve.
Yield: 4 servings
