New Wave Chicken 9/98

2 lb whole chicken
8 whole black peppercorns
6 whole garlic cloves
2 cup bread crumbs
1/2 cup parmesan cheese
1 tablespoon basil
1 tablespoon oregano
1 tablespoon thyme
3 tablespoon cajun spice; separated
Place chicken in a stockpot just large enought to fit snugly. Cover chicken with water, add peppercorns and garlic and bring to a boil. Reduce heat to simmering and cook until the meat is tender, about 35 minutes. Carefully remove chicken to a platter to cool. Reserve liquid for another use, such as some good chicken soup. Preheat oven to 350. In a large bowl, combine bread crumbs, cheese, herbs, and 2 TB. of Cajun seasoning. Cut up chicken into pieces and sprinkle with remaining TB. of Cajun seasoning. Working with one piece at a time, toss chicken with bread crumb mixture until thoroughly coated; transfer to a baking sheet. Coat all pieces. Bake chicken about 30 minutes until golden brown & crispy.
