Naydine's Pimiento Cheese 3/98

1/4 cup sugar
1/4 cup balsamic vinegar
1 egg yolk
3/4 lb shredded cheddar; (3 cups)
1 tablespoon miracle whip
1 small jar pimientos
Drain pimientos well; set aside. Cook sugar and vinegar over low heat for 15 minutes. Cool until thickened; blend into egg. Mix all together. If too dry, add more Miracle Whip.
Yield: 4 cups
