1 medium onion: chopped
1 small green pepper; chopped
1 tablespoon bacon grease
1 lb ground beef
1/2 lb macaroni
16 oz can tomatoes; chopped
16 oz can corn; drained
12 oz velveeta; chunked
1 salt & pepper to taste
1 louisiana hot sauce to taste
1 sour cream
Saute onion, green pepper, and ground beef in a dutch oven in the bacon grease. Cook macaroni and drain. Add all ingredients except sour cream to the ground beef mixture. Cook and stir until the cheese is melted. Put on plates and mix in a dollop of sour cream before serving.
Yield: 6 servings
