Moist Bran Muffins 6/00 #516

1/2 cup all bran
1/2 cup milk
2 tablespoon vegetable oil
1/2 cup all purpose flour
2 tablespoon sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup raisins; optional
In a bowl, combine the bran and milk; let set for five minutes. Stir in the oil. Combine remaining ingredients; stir into bran mixture just until moistened. Add raisins if desired. Fill greased or paper lined muffin cups half full. Bake at 400 for 20 minutes or until a toothpick comes out clean. Cool for five minutes before removing from pan to a wire rack. Yield 5 muffins.
