Mini Pecan Pies #594 10/01

----Dough----
5 cup flour
1 lb butter; melted
16 oz cream cheese; softened ----Filling----
3 large eggs; beaten
1 lb brown sugar
1/2 stick melted butter
1 teaspoon vanilla
1 cup pecans

Mix dough ingredients; knead. Make 3/4" balls and place into miniature muffin pans. Use a small medicine bottle to press the dough down and up the side of the pans. This should be fairly thin. Place some pecans into this and then fill about 3/4 full with the filling. Spoon this is with a small spoon. Filling: Mix all together; do not let this set, it should be hot or it will be too sticky to pour. You may have to reheat to remain at desired consistancy. Bake at 375°F for 20 - 25 minutes.
