Milwaukee Pork Stew ****1/2 8/96

1/3 cup all purpose flour
1 1/2 teaspoon salt
1/2 teaspoon pepper
1 lb pork boneless sirloin, cubed
2 tablespoon vegetable oil
2 large onions; sliced
1 clove garlic; finely chopped
1 teaspoon caraway seed
1 teaspoon bay leaf; crushed
14 1/2 oz chicken broth
1 can of beer
1 tablespoon brown sugar
2 tablespoon balsamic vineagar
Mix flour, salt and pepper. Coat pork cubes with the mixture. Heat oil in a dutch oven over medium high heat. Cook pork in oil until lightly browned. Stir in onions and garlic. Cook five minutes, stirring occasionally. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and cook over medium low heat for about 1 hour, stirring occasionally, until pork is tender. This was very good with potato dumplings cooked on top of the stew. It would also be good with some Parmesan cheese and croutons on top as in French onion soup.
