Mama Hunter's Applesauce Cake **** 12/96

1 cup sugar
1 3/4 cup flour
1 teaspoon baking soda
1 1/2 teaspoon cinnamon
1 cup nuts
3/4 cup raisins (optional)
1 egg; slightly beaten
1 teaspoon vanilla
1 cup applesauce; heated
1/2 cup butter; melted
1 granulated sugar

Mix dry ingredients together. In a large bowl, beat the egg, then pour dry ingredients on top. Mix applesauce, butter, and vanilla together in another bowl. Using a mixer, add applesauce mixture to dry ingredients. Beat it well. Pour into a greased pan and sprinkle with granulated sugar. bake at 350 for 45 to 55 minutes or until knife inserted in middle comes out clean. Let set for 10 minutes and then cool on a wire rack.

Yield: 1 loaf
