Malty Cheddar Spread **** 12/94

2 scallions; whites only
1 clove garlic; peeled
2 tablespoon dijon mustard
2 tablespoon ketchup
1 tablespoon horseradish
1 3 oz cream cheese
3/4 lb sharp cheddar; diced
1/2 cup flat beer
Chunk up the scallions & bring cream cheese to room temperature. Put everything except beer in the food processor and buzz about 30 seconds. Scrape down the bowl and process about 10 seconds longer. Add beer, pulse a few times and process nonstop for 60 seconds. Scrape the bowl and buzz for 60 seconds more, until creamy smooth. If you freeze it, thaw in the fridge and mix it again in the processor until creamy. Makes 3 cups. This recipe is a little too much for an Oskar. Suggest cutting it in half for that machine.
