Hot German Style Potato Salad ***

1 1/2 lb small red potatoes
1/2 cup red wine vinegar
1 each medium onion, chopped
2 teaspoon sugar
1 teaspoon salt
1/2 teaspoon pepper
2 teaspoon all purpose flour
2 tablespoon minced green pepper
2 each slices cooked ham, minced
1 single minced parsley for garnish
In a four quart saucepan, heat unpeeled potatoes and water to cover to a rolling boil. Reduce heat to low, cover, simmer for 15 minutes or until tender. Drain, and be sure to cool the potaotes slightly. Cut each into quarters. Return to pan. Meanwhile, in a 1 qt. saucepan over high heat, heat vinegar, onion, sugar, salt, pepper, and 1/4 cup water to boiling. Reduce heat to low: simmer 5 minutes. In a cup, stir flour and 2 Tbsp. water; add to vinegar mixture. Cook, stirring constantly until mixture thickens slightly. Gently stir green pepper, ham, and vineagr mixture into potatoes until well coated; heat through. Garnish with parsley.
