Banana Quick Bread ****

3/4 cup whole wheat flour
3/4 cup all purpose flour
1/3 cup sugar
2 1/4 teaspoon baking powder
1/4 teaspoon salt
3/4 cup grape-nuts cereal
1/2 cup raisins
2 eggs; beaten
1 cup mashed bananas (2 or 3)
1/4 cup butter; melted
3/4 cup milk

In a large bowl, combine flours, sugar, baking powder and salt. Stir in cereal and raisins. In another bowl, combine eggs, bananas, butter, and milk. Add this mixture to flour mixture, stirring until dry ingredients are just moistened. Pam a 9" x 5" x 3" loaf pan and pour in the batter. Bake for 50-55 minutes or until a tester inserted in bread comes out clean. Let bread cool in the pan for fifteen minutes, then turn it out to finish cooling on a rack. Wrap bread in plastic wrap and let it stand for about 8 hours before slicing it (If you can wait that long).

Yield: 1 loaf
