Hink's Scalloped Potatoes **** Revised 3/01

3 tablespoon butter
3 tablespoon flour
1 teaspoon salt
1/4 teaspoon pepper
3 cup half & half
3 teaspoon brown sugar
6 each medium potatoes; 2 lbs.
1 onion; minced

Peel potatoes and slice thinly. In a 2 qt. saucepan over medium heat, melt butter; stir in flour, salt and pepper. Cook for two minutes, stirring constantly. Gradually stir in the Half & Half and brown sugar and cook until the sauce is smooth & thickened. In a greased 2 qt. casserole, arrange half of the potatoes; sprinkle with half of the onion; pour half of the sauce on top. Repeat with remaining potatoes, onion and sauce. Cover casserole and bake at 350 for 1 hour. Uncover and bake 1 hour longer or until potatoes are fork tender and top is lightly browned.

Yield: 6 servings
