Herb Roasted Garlic Spread 8/00 #531

4 garlic bulbs
1/4 cup olive oil
1 teaspoon salt
1 teaspoon basil
1 teaspoon oregano
1/2 teaspoon pepper
8 slices sourdough bread; toasted & halved

With a sharp knife, cut off the top 1/2 inch from each garlic bulb to expose the ends of the individual cloves. Leaving the garlic bulbs whole, remove any loose, papery outer layers. Fold 4 18X9 inch pieces of heavy foil in half to make 9 inch squares. Place each galic bulb, cut side up, in center of a foil square. Drizzle the bulbs with olive oil and sprinkle with salt, basil, oregano, and pepper. Bring up opposite sides of the foil and seal with a double fold. Fold remaining edges together to enclose garlic, leaving space for steam to build. Bake 35 to 40 minutes in a 300 degree oven or until garlic bulbs feel soft when packets are squeezed. To serve, unwrap garlic and transfer to serving plates. Squeeze garlic pulp from each clove; spread onto toasted bread.
