Hearty Black Eyed Peas 1/00

16 oz package dried black-eyed peas
4 cups water
1 medium onion; chopped
1/2 teaspoon pepper
1 small picnic shoulder (cottage ham)
6 fresh jalapeno peppers; finely chopped
fresh chopped chives
Soak beans overnight. Rinse them and add to a large dutch oven with the remaining ingredients. Bring to a boil, cover, reduce heat and simmer for about one hour or until peas are tender. Serve this with some corn bread. Or over some corn bread.Garnish with fresh chives to taste.
