Hawaiian Spareribs #560 3/01

2 lb country style pork ribs
1 cup brown sugar
3 tablespoon corn starch
1 cup red wine vinegar
3/4 cup chili sauce
3/4 cup water
8 oz can crushed pineapple; undrained
1/2 cup chopped onion
3 tablespoon soy sauce
1 tablespoon dijon mustard
Boil ribs in a saucepan for 40 minutes. Line a 10 X 7 1/2" baking tin with foil. Arrange ribs in a single layer. Cover and bake in a 350 degree oven for 30 minutes. In a 2 quart saucepan, stir together the brown sugar and cornstarch. Stir in the vinegar, chili sauce, water, undrained pineapple, onion, soy sauce, and mustard. Cook and stir over medium heat until thickened and bubbly; cook and stir for 2 minutes more. Remove roasting pan from oven. Drain fat from ribs. Spoon about 2 cups of the sauce over the ribs. Reserve remaining sauce in saucepan. Cover ribs and bake about 45 minutes more or until ribs are tender. Heat sauce and serve over ribs. This was good served with hash browns. Might try scalloped potatoes.
