Ham Carrot Cheese Soup 12/98

3 tablespoon butter
2 tablespoon flour
1 medium carrot; diced
3 green onions; sliced
1 cup cooked ham; diced
2 cup chicken broth
1 cup cheddar cheese; shredded
2 teaspoon parsley
1/4 teaspoon pepper
1 dash louisiana hot sauce
In a saucepan melt the butter; stir in flour until smooth. Cook and stir over medium heat for 2 minutes. Add carrots, onions and ham; cook and stir for 1 minute. Gradually add broth. Bring to a boil and stir for 2 minutes. Add cheese, parsley, pepper, and hot pepper sauce; heat until the cheese is melted and the veggies are tender.
Yield: 2 servings
