Grilled Cheese & Tomato Sandwich 4/01 #566

4 slices whole wheat bread
2 slices mozzarella cheese; cut to fit bread
4 thin tomato slices
1/3 cup yellow cornmeal
2 tablespoon parmesan cheese
1 teaspoon basil
2 eggs
1/4 cup milk
1 tablespoon butter
3/4 cup spaghetti sauce
On each of two bread slices, place 1 slice of cheese and 2 tomato slices; top with remaining bread slices. Combine cornmeal, Parmesan cheese, and basil and put on a paper plate. In a shallow bowl, combine eggs and milk. Melt butter in a skillet. Dip sandwiches in egg mixture; coat with cornmeal mixture. Transfer sandwiches to skillet. Cook for 3 minutes on each side or until golden. Cut in half and serve with heated spaghetti sauce for dipping.
